What You Need: 2 cups milk 1 (7 inch) vanilla bean, split lengthwise 6 egg yolks 1 cup packed brown sugar 3 tablespoons honey 1/4 teaspoon salt 2 cups heavy cream Directions:
Peach & Toasted Pecan Ice Cream It’s a taste of the South. Everyone loves peaches and pecans What You Need: 3/4 cup sugar 2 tablespoons cornstarch 1/8 teaspoon table salt 2 cups milk 1 cup heavy whipping cream 1 egg yolk 1 1/2 teaspoons vanilla bean paste (can substitute vanilla extract if necessary) 1 cup peeled and coarsely chopped peaches 2 tablespoons light corn syrup 1 1/2 tablespoons butter 1 cup coarsely chopped pecans 1/4 teaspoon kosher salt Directions:
While this is cooling, cook the peaches and corn syrup over medium heat for about four to five minutes. Stir often. Mash and allow to cool for thirty minutes. When cool, stir into the cream mixture. Cover with plastic wrap and chill for eight to twenty-four hours. In a small skillet, melt the butter over medium heat and add the pecans. Stir constantly for eight to nine minutes until the pecans are toasted. Remove these from the heat. Sprinkle with the kosher salt. Allow to cool completely. Follow the manufacturer’s instructions for your freezer to make the ice cream. Just before transferring the ice cream to an airtight container, still in the pecan mixture.
