I am proud to say, this is my husband's very own recipe and it is amazing! It is super easy to throw together and you can adjust it to your specific taste by adding or omitting veggies and even seasonings, like a sprinkle or two of cayenne pepper. What You Need: 1/2 Red onion (chopped) 1 Medium yellow pepper (chopped) 1 Medium sweet red pepper (chopped) Mushrooms (chopped) 1 Clove of Garlic (minced) 2 Tbsp salsa Flour tortillas Shredded cheese (colby jack or mexican blend works great) Olive oil Directions: Saute veggies in a small amount of olive oil, til they're done. (Aprox 5-7 mins) Add salsa and give it a good stir. Put veggies in a bowl & set aside, for now.
Heat a spoon full of butter, in a griddle pan. Place tortilla on griddle & {carefully} press lightly with your hand, while rotating, to evenly coat it with butter. Add a spoon full of the veggie mixture on 1/2 of the tortilla, cover with a generous sprinkle of cheese. When cheese is almost melted, fold the tortilla over and flip it once. Give it a little smush with a spatula to flatten it down and cook 'til golden brown on both sides, cut into triangles and serve. This is great topped with homemade guacamole or sour cream.
