Dinner does not have to be a four letter word; it couldn't, even if it wanted to, it has six letters, not four, but I digress. I am always looking for ways to provide my spawn with yummy, nutritious-adjacent meals that don't take forever to fix or require me to dirty a ton of dishes. One of my fave "go-to" meals is/are: chicken tacos. If you can chop an onion, a head of lettuce and brown some chicken in a pan, you too can have chicken tacos for dinner. See below for the full recipe. This "recipe" is super easy! Simply dice up some chicken, (I find it is easier to cut if you leave it a little bit frozen), brown the chicken in a skillet, with some seasonings, I use cumin, paprika, garlic powder, ground white pepper, chili powder and a little bit of brown sugar. (You could totally cheat and use a taco seasoning pack, I won't tell)
While the chicken is browning, chop a red onion and about a half a head of lettuce. Set out all the necessary ingredients and allow each person to make their own plate, because you are no maid. I kept it simple with shredded cheese, shredded lettuce and red onions, but you can get fancy and add sour cream, fresh avocados or homemade guacamole.
