Lately, Micah has been super picky and refuses to eat half the food I put in front of him, instead, opting for crap like sandwiches and snack foods. In an effort to get him to eat something with a modicum of nutritional value, I decided to make him his own batch of cookies... healthy, good for you, full of yummy, nutritious goodness cookies.
The peanut butter is full of protein, the addition of the applesauce adds sweetness without adding sugar, the bananas add the right amount of flavor and the oats are a nice, consistent energy source. The honey is technically optional, I like the flavor it adds, but you could use flavored agave, instead, if you like. Having several kids can be both a blessing and a curse. For example, if you have tons of chores that need to be done, multiple kids is definitely the way to go, but when it comes to going out and doing anything that requires spending money, less is best. Seriously, have you been to the movies lately?! If you have more than one kid, probably not. Everything is sooo expensive nowadays, it's usually just cheaper to grab a movie from the corner rental box thingy, grab a few snacks and chill at the house, which is exactly what we did last weekend. With a little help from the awesome food and drink section at World Market and these easy tips, you, too can have an awesome family movie night at home, where pajama pants are perfectly acceptable. I made these amazing little bundles of gastronomic joy last weekend, for our "Cloudy With a Chance of Meatballs" themed family movie night. In a typical day, I... fix breakfast, wash clothes, find lost socks, answer emails, write posts, fold clothes, find another lost item, tend to minor medical "issues", feed kids lunch, take out the trash, drive eldest to work, decide what to cook and cook supper, load dish washer, bathe the little one, fold another load of clothes, fight with the little one to go to sleep, go pick the eldest up from work, sit in my comfy chair for all of ten minutes, then go to bed. With all the stuff I have to accomplish on a daily basis, it's no wonder why I often forget to do stuff... like eat. Well, eat well anyways. I often catch myself snacking on Micah's leftover breakfast or a sandwich I threw together in between the million other things I do during the day. I used to buy the pre-prepared, crappy, processed, convenience foods that we all fall into the trap of buying from time to time, but once I educated myself on all the nasty stuff in those "convenience" foods, I quickly decided the "convenience" was not worth the possible damage it could do to myself and my family, so I now make a conscious effort to make better food choices. Lucky for me, the food companies are starting to follow suit, by cutting out the nasty high fructose corn syrup and all the junk that steers us away from buying, all the while, keeping the convenience we all want. My recent favorites are these awesome new products from Del Monte. Unfortunately, Micah can sometimes be a little picky when it comes to eating his lunch. He would probably eat PB&J or chicken rings every day, if I'd let him, and as easy as that would be, it's not really all that healthy, so I have had to resort to trickery (and sometimes bribery) to get him to eat a wider variety of foods. I am not above offering ranch dressing to dip his veggies in and I am guilty of sneaking veggies in, where you wouldn't even imagine them and I have found if you cut up a flatbread sandwich into pinwheels and call it ham & cheese sushi, he'll eat it. This easy, but healthy recipe is yummy and definitely kid approved and can be made easily with items you already have on hand... Score!
