It's no secret, I love to eat. I also love to cook, but I hate to clean up the mess left afterward. This super easy bbq chicken pizza is not only delicious and easy, but relatively mess free. Try it tonight and let me know what you think. Crock pot bbq chicken couldn't be any easier... unless someone else made it for you. All you do is: Put the chicken in a crock pot, add some water and a few seasonings (or you could use broth). Let it go for about 5 or 6 hours, on low. When it shreds easily with a fork, drain all the juice off. Return the chicken back to the crock pot, add a bottle of your favorite bbq sauce and let it warm through for about 30 minutes or so.
For the crust, I totally cheated and used some naan bread I had left over from another meal. I brushed it with olive oil and par-baked it for a few minutes, before adding the toppings and it was perfectly crispy on the edges and soft in the center. I used a spoon-full of the bbq sauce, as you normally would a tomato sauce, then sprinkled a little bit of mozzarella, a few baby bellas and the shredded bbq chicken and a sprinkle of sweet basil. Since the chicken was cooked and I par-baked the crust, all you need to do is melt the cheese and let it all meld together, about 8 minutes or so on 350 was good. If you have a picky little one, like I do, you can always use less sauce or more cheese or no mushrooms or whatever his or her little heart desires at that exact moment, which will probably change before you get dinner served, but hey, you tried.
