Family Friendly Indian Inspired Recipes

In celebration of the release of "The Second Best Exotic Marigold Hotel", I have partnered with World Market, to bring you these family friendly Indian inspired recipes.

Wait, what?!

Yes, I said "family friendly Indian food".  I know what you're thinking... "Kids won't eat that!" and while I agree, most kids won't eat anything that contains a lot of spice, as most Indian cuisine does, I assure you,  these recipes are kid tested and Mom approved.

For starters, I decided to go with a classic toasted naan bread with a yummy mango chutney cheese spread. This dish was super easy and even the littlest one tried it, without much prodding.
Mango Chutney Cream Cheese Dip
All you need to do, is soften a block of cream cheese, add about 2 Tablespoons of the mango chutney and mix well. I added a bit of the chutney, on top, just for color, but that's totally optional.

For the bread, I melted a little bit of coconut oil in a pan and fried each piece of bread for about 30 or 45 seconds on each side. You could also put them in the oven, but I like the crispiness you get from pan frying.

After consuming copious amounts of bread and cheese spread, we moved on to the main course, coconut chicken lettuce wraps. This was a little bit out of our comfort zone, admittedly, the oldest wasn't a fan, but he tried it and that's all I can ask.
Coconut Chicken Lettuce Wraps
This dish was super easy to prepare, with the help of some Patak's Korma simmering sauce. Simply, dice some chicken, add a little coconut oil to a pan,  brown the chicken, drain it, then add the jar of simmer sauce and let it go for about 15 or 20 minutes, on low. When it was done, I garnished with a little flaked coconut and some diced red onion.

This amazing maple chai jasmine rice pudding was, by far, my favorite part of the meal. (duh!) The flavor was so rich and the maple chai adds just the right amount of sweetness.
