Quiche is not typically a dish that most men will admit to eating, but this one is fully man approved, even my picky eighteen year old son liked it. This is not the usual recipe that calls for a pie crust, instead, I used Ritz crackers, making it even yummier and a bit less dainty.
As parents, we will do anything to make sure our kids succeed in life and potty training is no exception. I have been seriously working with Micah for about 2 months now and things are going Okay-ish. As with all things related to child rearing, some days are better than others. He's got the #1 thing down, but #2 is giving him problems. Honestly, I think {in his mind} he's just too busy doing other things to take a potty break, especially when we're outside playing. If I remind him often {harass him like a stalker}, he'll go to the potty every time, but left to his own devices, he'll opt for a wet pull-up over going inside to pee any day, but I keep working with him, knowing that eventually it will click and he WILL go to the potty on his own. {hopefully before kindergarten} *Cut to an hour ago*
After a difficult afternoon of wet pull-ups and false poop alarms, I was desperate! I sat Micah on the potty and I explained to him that we were going to try again to poop in the potty. I sat, waiting for the tell-tale *splash* to let me know he was done, but it never came, the little monster got me again... no poop. Feeling dejected, I almost gave up, but something in me said "No, don't give up yet, you can do this". I decided then and there we were gonna make this happen one way or another. I turned on the water faucet, as my Mom did for me *mumbles inaudible number* years ago... nothing. I begged, I pleaded, I bribed and I was about to shed a tear... then I heard it, a raspy, angel voice from above, Tina herself, whispered this little gift into my ear and I knew what I must do... I remixed "Proud Mary" and into "Proud Micah" and it goes a little something like this..... It never ceases to amaze me how fast my kids gobble up this yummy, healthy, baked-not-fried dish. Tilapia is a very light tasting fish that has a nice texture and with the right preparation, will satisfy even the pickiest little palate.
This is a super quick and easy dish to throw together when you really don't feel like cooking. The sweetness of the honey with the contrast of the garlic really work in this recipe.
