Unfortunately, Micah can sometimes be a little picky when it comes to eating his lunch. He would probably eat PB&J or chicken rings every day, if I'd let him, and as easy as that would be, it's not really all that healthy, so I have had to resort to trickery (and sometimes bribery) to get him to eat a wider variety of foods. I am not above offering ranch dressing to dip his veggies in and I am guilty of sneaking veggies in, where you wouldn't even imagine them and I have found if you cut up a flatbread sandwich into pinwheels and call it ham & cheese sushi, he'll eat it. This easy, but healthy recipe is yummy and definitely kid approved and can be made easily with items you already have on hand... Score!

It's no secret that kids like to eat, especially mine. I have to shop like a ninja just to be able to stay on budget and not run out of food by the end of the month. Look around for alternative places to shop, ask friends where they shop, you'll be surprised what great gems are out there, just waiting to be found.
