Unfortunately, Micah can sometimes be a little picky when it comes to eating his lunch. He would probably eat PB&J or chicken rings every day, if I'd let him, and as easy as that would be, it's not really all that healthy, so I have had to resort to trickery (and sometimes bribery) to get him to eat a wider variety of foods. I am not above offering ranch dressing to dip his veggies in and I am guilty of sneaking veggies in, where you wouldn't even imagine them and I have found if you cut up a flatbread sandwich into pinwheels and call it ham & cheese sushi, he'll eat it. This easy, but healthy recipe is yummy and definitely kid approved and can be made easily with items you already have on hand... Score!
Start with a piece of flatbread , add your favorite sandwich ingredients... Ham, turkey, chicken breast, etc. Add a piece of cheese and some torn fresh baby spinach leaves then drizzle a little bit of ranch or your favorite condiment.
Roll the "sushi" as you would a burrito, tuck the sides in, then roll over.
You'll have a little ham and cheese burrito-sushi pocket of goodness, cut it halfway, then cut each piece in thirds. You really can't screw this up and if you do, just call it something fun, put it on a plate and the kids will still eat it.
