Nothing says "Summer" like fresh sweet corn, but I get kinda bored with plain ol' corn on the cob, so one night, I decided to cream it... Yes, I know, I'm such a rebel. (I have a few tattoos to prove it, too, none of which are corn related) I'd never made creamed corn from scratch, so I did what I usually do... I googled several recipes online... Then I "Frankensteined" a new recipe out of the aforementioned Googled recipes, I try them and then share them with you guys.... It's totally legit, I googled it.

If you've been following my blog for a while, there's one thing you know about my recipes... They're usually super easy, budget friendly and totally yummy and this one is no exception. With a couple of easy to find ingredients you can make these yummy Oreo truffles. You can use any flavor Oreos, but for this one, I chose one of my seasonal favorites, Strawberries & Creme. I have made these at Christmas and used the mint flavored Oreos and they were AMAZING! I am going to make these for Micah's birthday in August. I plan to use the birthday flavored Oreos with red {white} chocolate on the outside and I am going to put an edible eye in the middle to look like Muno for his Yo Gabba Gabba party I'm planning. It will probably not look at all like it does in my head, but the average age of the kid at the party is five, so I'm not that worried about it. : )
