As it often goes, sometimes, despite our best efforts, we fail... and these cupcakes are a prime example of how you can turn a negative into a positive... or at least an O.K. and let me tell you, These are the Okay-est cupcakes I've made all week {also the only cupcakes I've made all week} My initial idea was to put the bunnies on top of the cupcake and put the candies behind him to simulate poop... I know, I know, it's childish, but it would have been EPIC!!! My only problem was the bunnies are very top heavy and kept falling off, so instead of getting mad and eating all the Peeps like I really wanted to, I decided to try to salvage the cupcakes and this is what I came up with. I used a funfetti type mix and subbed coconut oil for the required vegetable oil and I used cream cheese/cotton candy frosting with some green tinted coconut flakes to serve as grass. {I used 4 drops of green to 1/2 cup of flaked coconut}
Even though my "artistic vision" was not fully recognized, I still had fun in the kitchen with Micah and he enjoyed licking the beater, so in my book, any fun time spent with the littles is a major SCORE! This is just another way to turn a plain old box mix into something fun and pretty. These cupcakes are easy to make and will be a huge hit at your Easter dinner. I used a funfetti box mix and a Duncan Hines cotton candy frosting flavor packet added to a tub of cream cheese frosting., it gave it the perfect blue color.
I took about a half a cup of coconut flakes and tinted them green with 4 drops of food coloring, smooshed up in a ziploc baggie, then sprinkled some on each cupcake, making a "patch of grass". I took some sixlets candies and arranged them to look like eggs hiding in the grass and added a cute pick in the top, I found them at the Dollar Tree with the liners. |
